I Pauliefied an Instant Pot vegetarian chili recipe last night and it was quite good. Bonnie, was the chili you made last Friday made using this vegetarian chili recipe from Pinch of Yum?

Here is my updated version:

Instant Pot – Pumpkin Walnut Chili
Serves: 12 cups

Ingredients:
• 1 Tbsp oil
• 1/2 onion, minced
• 2 poblano peppers, chopped
• 1 bunch green onions, sliced
• 3 cloves garlic, minced
• 6 cups vegetable broth
• 1 can (14 oz) fire-roasted tomatoes
• 2 cans (10 oz) Rotel tomatoes, chipotle flavored
• 2 cups walnuts, chopped
• 1 cup red lentils
• 1 cup bulgur
• 2 Tbsp chili powder
• 1 Tbsp smoked paprika
• 1 Tbsp (optional) salt
• 1 can (15 oz) pumpkin puree
• 2 cans (15.25 oz) black beans

Preparation Steps:
1. Turn on Instant Pot to Sauté Mode.

When “Hot” add oil, onion, white portions from green onions, and poblano peppers.

Sauté for five minutes.

2. Add in the remainder of the ingredients (except for the pumpkin and beans) in the Instant Pot.

Put the lid on and move vent to Sealing, and set Instant Pot to Soup Mode (30 minutes).

3. When the timer ends release the pressure by doing a quick release.

When the pressure has released remove the lid, and put the Instant Pot to Sauté Mode.

Stir in the pumpkin and black beans, and cook until desired thickness is reached.

4. Serve with avocado, lime wedges, cilantro, tortilla chips, rice, cornbread, etc.

Notes:
I updated the ingredients by adding the oil, changing quantity of fire-roasted tomatoes, added the use of Rotel, added the green onions, and changed the liquid from water to vegetable stock.

I updated the steps by adding the first step, the sautéing of the vegetables.

  1. Tonight I will not go to SLUT, instead I will be spending the night at home exercising, cooking, and overall trying to get my head straight / shit together.

    I’m sure your “chili” was delicious, but just from the recipe, it doesn’t sound that way.

    A bit of a ride last night to at least shake the cobwebs off the bike.

    Up a bit early to feed the horses- at least to throw them some hay. Dogs will have crossed legs by the time one of us gets home this afternoon.

    Logged onto FB to find some officiating friends in Texas had a house fire overnight. Must have started in the garage, as the motorcycle is a puddle and the car is equally useless. They are safe and it’s just stuff. Reminds me to take a video camera and walk around the house and record the contents. Then store the recording off site.

    Paulie, yes this is what I made Friday. I thought it was fine but not my favorite. Did you like yours better than mine? I doubled the pumpkin, substituted quinoa for buglur, substituted chipotle spice for whole chipotle peppers, used half water and half low-sodium vegetable broth, and did not add any salt (though I know you added some to your bowl 🙂).

    Awake way too early CA time.
    Original flight time 6pm. War change, 8pm. Then 6:30pm. Then 7:30pm. Finally departed around 8pm.
    Finally landed about 10pm, shuttle to the hotel shuts down at 10pm, so had to Lyft.
    $25, not bad I guess.
    5 hours in the airport was plenty.
    Delta changing the flight times was annoying.
    I will be sending an email, hopefully get some extra FF miles for their screwing with the departure times.

      Damn, this is early for a vacation! Delta should certainly spring for some FF miles, that’s the least they could do.

      Shuttle back to the airport only runs 1 time per hour. Had to be ready at 0800. We need to go back to the airport, get the rental minivan, and get to wine country!!
