It was almost a very productive night last night, but the amount of preparation and cleanup involved with the two dishes I made last night, after doing a hard 45 minute workout on the trainer, did me in.

Originally I was going to make an Instant Pot’s worth of “baked” beans, and bell peppers stuffed with couscous, cheese, and sausage. The first time I made the beans it was great, last night’s rendition was not as good. When I realized how long it was going to take to cook the stuffed peppers I decided to ditch the idea of stuffing the peppers and bake an impromptu couscous casserole instead; this turned out amazingly well.

I am making today all about me, starting the day at the Waschsalon sans WiFi hence no photo of the couscous casserole. Update, here it is!

    We’re sitting at breakfast at the Huddle and both read the description of your cooking last night as a single dish- yuck! Then realized it was 2- sorry.

    Celebrating my birthday today with a nice dinner somewhere as yet determined. Hopefully a bicycle ride today before the monsoon starts again. Dusted off the scooter for a half hour yesterday.

    Went on a day trip yesterday to Butts County (where I saw a Huddle House! :)), that included a spur-of-the-moment stop at Tanger Outlet Mall where I scored a pair of Columbia hiking shoes on clearance for $19.99. I hope they fit (I can somehow never tell if shoes fit… 🤷🏼‍♀️).

      I love you went to a deserted mall in Gwinnett too.

        Barb, for the same reason we went to the deserted mall—“Stranger Things” filming locations. We went to downtown Jackson yesterday which is the “downtown” of the city in the show (Hawkins, Indiana). The husband is really into the show (I like it too).

        I tried to get him to go hiking yesterday but he wanted to do this. I won a small battle today as he conceded to walk on the (paved) Beltline. 😂
