Grease Pan was the step I missed when making enchiladas last night. Boy did I have trouble getting them out of my ungreased pan. 🙁

I’m already planning things for August, September, and October. Go figure! Also, I’m looking into accommodations for these events as they are within driving distance, but not same-day ventures.

  1. Most of my future ventures center around camping, cycling, and mushrooms, not all at once of course.

    Grease pan – what a great idea.
    I add enchilada sauce in the bottom of the pan before adding the enchiladas, so they don’t stick too bad, but I bet greasing the pan would make it better. (I never remember to do that)

    I’ve never made enchiladas, I don’t know why. Maybe I should add it to my rotation, which is kind of in a rut these days.

    We have a full day of activities tomorrow, culminating in a night game for Finn’s Buddy Baseball team up in Buckhead. Sunday will be a rest day!

    • I’m going for a long bike ride on Sunday. Don’t know if I will tackle hills/mountains however. Need to ensure my seat pack has all the things needed to keep me rolling, and if that’s not possible, a charged phone to call for help.

        if the weather cooperates – we are hoping to get a bike ride in tomorrow.

        Paulie – there’s the Mayors Ride in Roswell Sunday morning – do that & you won’t have to worry about anything – and it will be a great training ride – plenty of hills!
        We haven’t decided about it yet – we have plans Saturday night that could keep us out a little late, and then we won’t want to get up early Sunday morning.

        Spring Dress ride is also Sunday afternoon, if you want to see a group ride around Midtown & VA highlands in dresses.

        • Sal mentioned the Mayor’s Ride. Not sure I want to drive up there, and pay for a ride. Granted, if I want hills I need to drive somewhere. I need to get over my concern of riding alone which inexplicably arose the last couple of years. Three years ago I did some awesome solo rides.

          Spring Dress? Naaaaah! 🙂

          Red’s has some bluegrass jam on Sunday from 18:00-20:00, I may ride/walk to it.

      Jenka –
      after we make crockpot mexican chicken (or have leftover pork) we make the enchiladas. Add more black beans, cheese, & sour cream, green chilies, etc., mix it all together & roll it up in tortillas. Then smother with either red or green sauce (or mix the sauces together, depending on what’s in the cabinets)

        Yeah, sounds like a really easy way to use the rest of the chicken. I am not a fan of the red sauce but I love the green.

  6. Made a cheesy beer (quick)bread this morning. Simple, and delicious. And even though I greased the pan, it stuck!

    Fighting the good fight with the weed eater. Got it started, ran it for some time to warm it up well. Filled the tank, changed into weed eating boots and started down the driveway. Maybe 3 minutes, stopped. Wouldn’t restart. F. Can’t find my carb adjusting tools, which I specifically bought for this last year. Double F.

    Found that “Bugs Bunny at the Symphony “ will be in Nashville in mid-June. Might just have to make that happen.

    Ride later before a doctors appt. this afternoon.

    Twilight crit in Athens tomorrow.

  8. The NFL Draft is minting a whole new batch of millionaires, because our society has its values all screwed up. Good on the young men for cashing in, I only hope that they spend and save wisely.

    Seeds from Sally are planted – we will see what grows out there this year.
    Tomatoes I planted earlier in the week are looking good too.
    I’m going to try to pay more attention this year, so maybe everything will grow better.

    • Given that BRAG will be my longest duration away from WLF (unless something drastic happens) this year, I should be able to bring in a decent amount of food to hopefully eat and preserve. All of the activities I referenced are no more than three, perhaps four, days away from home.

    21 miles in the books. Played leap frog with our mailman. Woke up a couple dogs. A good day..
