Hey, I get to add a recipe to the Win column! Last night I made my take on this Hot and Spicy Peanut Butter Udon Noodles, in which I substituted a tablespoon of miso paste for one of the tablespoons of peanut butter, and added some mini bell peppers and a ton of spinach. I thought it was rather delicious.

It’ll be another busy day as I go see “Safety Net” tonight at Theatrical Outfit, before going home to get everything thing ready for this weekend’s camping trip.

  1. Barb, did you get to taste the Toad in the Hole from last night’s sausage party?

    • barb says:

yes – it was interesting – it was Dawn’s Italian version of it.
I’m just not the hugest sausage fan, so I only has a small amount.
there was plenty of food – so much leftover.
But -the beer cheese soup was quite the hit, so there wasn’t as much of it leftover as I thought there would be.

You took OUT some peanut butter? If there was a single food staple I could never live without, I think it would be peanut butter (yes, even more than beer).

Debbie made one of the Home Chef meals last night- Kung Pao Shrimp Tacos. Pretty good, but not worth the effort. I was still hungry…

We wandered the “new” property last night and discussed options on fencing and gates. Land clearing of “our” property is next on the list. This will be a major shift from living in a forest. The front will go and become pasture, leaving the bigger oaks and hickories. As it’s got a nice “roll” to it, I think it should be lovely. Hopefully the horses appreciate it.

    • Yes, but to be fair all I did was reduce the PB from five tablespoons to four. I also thought the addition of miso, which I currently have in the refrigerator, was fitting for a Japanese-style dish.

that does sound like a good recipe – I may have to try it someday.
I too am a lover of peanut butter.
