The Crapshoot Crockpot Club

I woke up at 3:30am to put all of my ingredients into the crockpot so that the chicken breasts, which were straight from the freezer, would be cooked by noon. Turns out my crockpot doesn’t hold nearly as much chicken, especially when frozen, as I had hoped. Another problem with this sort of crockpot cooking is that the meat tends to fall apart, making for a far less pleasurable meal.

Today’s menu consists of:

  • chicken
  • new potatoes
  • chicken stuffing (from a box!)
  • green beans (from the massive can I mentioned yesterday)
  • cranberry jelly, complete with can markings

I’m sure things will taste good, perhaps a bit on the dry side knowing my experiences with skinless, boneless, chicken breasts. Only time will tell.

One of these days I’d like to get back into the habit of cooking in a kitchen so that I don’t have the concerns of trying to get everything into a single pot.

Last night was a typical night for me these days. I drove down to Colony Square for my German A1.2 class at the Goethe Zentrum, headed home to do work (of which I did none), and spoke to my mother on the phone for about a half hour before heading off to bed.

Thankfully my agenda for tonight is clear, which means that I’ll probably be working later than I desire. I should also probably gather all of the camping/LEAF things I want to pack into the Jackmobile on Friday morning (yes, I’m going to risk driving the Jackmobile to North Carolina), since I will be attending a show in midtown tomorrow night. Might I add, you all missed a fine show last Saturday night at Terminal West, you may want to consider coming out to The Loft tomorrow night for the Courtney Barnett show; it’ll be 180° from last Saturday night but entertaining nonetheless.

    I have gotten quite obsessed with one pot cooking, specifically dutch oven cooking. There is nothing quite like a dutch oven pizza while camping, the sausage egg and biscuit sandwiches for breakfast are pretty good too. I now want to camp more so I can work on my recipies. I can see a lot of spring trips in my future.

    Have fun in NC, we are going the other way to Memphis for the Memphis Outdoor festival. Mtn bike race, 10K, BBQ, Beer, and live bands all weekend. Should be fun! Just wish it was closer, not looking forward to all the driving.

    Bob (& everyone) – we are planning a Oak Mtn (Birmingham) camping weekend with Tony (Material Girl) and Eva for 11/1 weekend. I need to get on the planning of that. I know Dean is going, besides that, not sure who else. You do know that Tony now lives in the Memphis area? You should introduce him to your brother.

    I was dead tired yesterday, I’m not good at a 4:30am wake up call, and then working all day. Allan was sweet enough to make me a nice dinner, then I was sound asleep by 9:30. Anyone that knows me well, knows I rarely go to bed before 11pm.

    Memphis is a fun visit, hard to go wrong with blues and BBQ but yes the drive there sucks.

    Barb, we may go camping but not sure yet. We have Halloween stuff Friday night so may go for Saturday night if they do sights for one night only on weekends. I need to call them.

  5. Well, lunch went well but we ran out of chicken before the last guy arrived. Poop. Next time I should go with thawed breasts so I can put more in, and that should cut the cooking time as well.

    Now I need to figure out why I’ve become the Burpiest Man in the World recently. This has gotten me worried about my health again, but I am tired of running to doctors/specialists.
